Embark on a culinary journey with our Mushroom Quiche, where the earthy richness of porcini mushrooms meets the velvety embrace of oat cooking cream.

This exquisite mushroom quiche on oat cooking cream recipe redefines the classic Quiche Lorraine, creating a symphony of flavors that dance on your taste buds.

  • 100g Whole Wheat Flour
  • 100g Type 1 Flour
  • 350g Porcini Mushrooms
  • 600 gr spinach
  • 3 Golden Onions
  • 3 Sprigs of Thyme
  • 1 tablespoon Whole Wheat Breadcrumbs
  • 1 tablespoon Cornstarch (Maizena)
  • 200g Instead of Mlk Oat Cooking Cream
  • 3 Medium Eggs
  • 30g White Wine
  • Extra Virgin Olive Oil
  • Salt
  • Pepper
  • Thyme

In a bowl, mix the whole wheat flour with type 1 flour. Add 3 tablespoons of olive oil and 80ml of cold water. Work quickly to obtain a smooth and soft dough. Wrap it in plastic wrap and let it rest in the refrigerator for at least 30 minutes.

Blanch the spinach in salted water for 10 seconds, drain, and sauté in a pan with a clove of garlic.

Slice the onions and sauté them in a pan with 3 tablespoons of olive oil for 10 minutes. Add the cleaned and sliced mushrooms, season with salt, add half of the thyme leaves, and continue cooking for another 10 minutes. Deglaze with white wine and, gently stirring, keep on the heat for an additional 5 minutes.

Collect the cooking liquid from the mushrooms in a bowl, immediately mix in the cornstarch, and then add the oat cream, 3 eggs, a pinch of pepper, and a light sprinkle of salt.

Roll out the dough thinly to form a circle and use it to line a baking pan approximately 24 centimeters in diameter, lined with parchment paper. Prick the base with a fork and spread the oat cream over it, followed by the mushroom mixture with spinach. Sprinkle the whole quiche with breadcrumbs already mixed with the remaining thyme leaves and a tablespoon of olive oil.

Bake the quiche at 180 °C for 30 minutes and let it chill before try it.
